Near East Chicken Salad
Original recipe by Patsy Catsos from the Flavor without FODMAPs Cookbook. Recipe modified by Colleen Francioli Wheat-free, gluten-free, lactose-free, low-FODMAP

  1. ½ cup mayonnaise
  2. ½ cup lactose-free sour cream
  3. ¼ cup marmalade
  4. 3 tablespoons lemon juice, freshly squeezed
  5. 1 ½ teaspoons Madras curry powder
  6. ½ teaspoon cumin
  7. ½ teaspoon coriander
  8. ¼ teaspoon black pepper, freshly ground
  9. ½ cup red bell pepper, chopped
  10. 1 cup cooked basmati rice
  11. 1 ½ cups seedless green grapes, halved
  12. 2 cups cooked chicken
  1. Combine mayonnaise, sour cream, marmalade, lemon juice and spices in a large bowl.
  2. Add remaining ingredients and stir gently to evenly distribute the dressing.
  3. Garnish with walnuts or slivered almonds. Or add it to a wheat-free wrap!
  1. This recipe was originally adapted from the cookbook “Flavor without FODMAPs” by Patsy Catsos, MS, RDN, LD. It was then modified with lactose-free sour cream instead of plain sour cream to make it also enjoyable for those who have to negate lactose entirely. We also used less rice and grapes.
